Hungry Recipe - Onion Tart


I feel so sorry for onions, they get such a bad rap... but they are such an essential staple ingredient! I can always depend on finding a few hiding in my kitchen.

The following recipe is a perfect dish for a night where you have an empty fridge and pantry. As long as you have some onions around and a few other pantry staples then you have simple and delicious meal to prepare!

Onion Tart 
adapted from Stephanie Reynaunds 365 good reasons to sit down and eat
  • 1 sheet of puff pastry
  • 1 tablespoon of dried herbs (I used dried parsley and oregano)
  • 6 onions, sliced
  • 2 tablespoons of oil (I used macadamia oil)
  • 1 tablespoon of honey
  • 1/3 cup of pine nuts

  1. Preheat the oven to 180°C or 350°F
  2. Fold the dried herbs into the sheet of puff pastry, roll out and press into a greased tart dish
  3. Saute the onions with the oil in a large fry pan until they start to caramelize.
  4. Add the honey and pine nuts and brown.
  5. Bake the empty pastry base for 10 minutes, remove from the oven and top with onion mixture.
  6. Bake for another 5-10 minutes until the pastry looks crispy.

Serve with a green salad for a perfect lunch or a light dinner.
