WIAW & my need for green

It seems to be that time again for some sharing of food for the wonderful and fabulous WIAW.

While I was trying to think up some kind of catchy title for this blog post, I did happen to notice a very defined trend in my eating habits. I need to add green.... to everything. Yes, it is my favourite colour and there are the gazillion health benefits of green foods to think of... but it is also that they taste so darn good.

If your looking for an easy way to ramp up the health benefits (and taste) of any dish - my advice is to add a bit of green!


Breakfast was an amazing cookup of poached eggs, bacon, mushroom, asparagus on a bed of baby spinach. I will often substitute salad greens in place of toast or english muffins - cuts the calories but also really freshens up the dish.


For lunch, I mixed up a nifty, quick and healthy lentil dhal mix I found at the grocery store the other day. The packet mix is brought out by the chef Ainsley Harriott and I thought I might give it a go (I found it at Woolworths for anyone interested). The dhal took no time to prepare and didn't taste artifical in any way (as I find many premixes do). I also put the dhal on a bed of baby spinach in substitution for rice, added a dollop of greek yoghurt and some coriander.


My afternoon snack was a chobani strawberry greek yoghurt - I can't believe the protein stats on these little suckers. Makes me love them even more.


Dinner was magnificent. I recreated Skinnytastes Sante Fe Turket Stuffed Capsicums and added some oven roasted zucchini fries. I greenified by adding the zucchini side also so some sliced green onions to the capsicums which added a bit of a kick to the dish.


I even managed to add green to my dessert! I initially was only going to have custard protein oats (quick oats, milk and 1/2 cup of vanilla protein powder) but there was a lonely granny smith apple in my fruit bowl so I zapped one in the microwave and served with some shredded coconut and a baby pack of m&ms. So yummy!

  2. Sometimes I find it really hard to add greens to my meals. My favorite greens are baby spinach and I love the versatility of them. My favorite use for them is putting them into smoothies! The only way you can tell that it's in there is by the color :) The recipe is: 1 banana, 1tbsp peanut butter, 1/4 cup of plain Greek yogurt, 1/2 almond milk, and a scoop of protein powder. This is really filling and you can only taste the banana and peanut butter!

  3. I try to add as much green to meal as possible but that doesn't always work so I try to make one green smoothie a day so that can get all my greens in one sitting.

  5. Haha you are totally the opposite of me - I could live the rest of my life without green vegetables - I can eat other veggies but not green ones. I love the Chobani strawberry too! And your dessert looks phenomenal! That was pretty much my breakfast this morning haha

  6. Emilie, your pics look like they're straight out of a cookbook! I could look at them all day long. I really need to try poached eggs, I believe I've never had them before and judging from your breakfast they seem to be delicious.

  9. I couldn't have read this post at a better time! I generally tend to subtract green from my food rather than add it but the past 2 weeks I've been trying to revamp my diet and to vary it more and up the healthy factor! Spinach has become a close ally and I'm trying to befriend the likes of broccoli and asparagus so we'll see how it goes :) Your meals look amazing though..healthy and very tasty looking!

  10. I'm not so focused on greens, but more on the idea of getting enough vegetables. My diet consists mostly of green and orange veggies!

    I always vamp up my food with added protein powder, because otherwise I would never get enough protein! Similar to your custard, which looks simply awesome topped with those M&Ms :)

    1. Yeah vamping up with protein is an absolute must for me - plus it makes you feel fuller for longer!

      I love orange veggies too - especially sweet potato!

  14. I love dal! I'm trying to add more greens to my lunches and dinners. It takes a conscious effort but I believe that it is very feasible even if you eat out a lot (like I do)

    1. I, too find it hard to eat 'healthily' when I dine out. There are healthy options generally but I would much rather the naughty things on the menu!

  16. What healthy ymminess! I need these recipes ASAP, especially the turkey stuffed capsicums! I don't eat a lot of beef, but when I do eat meat, I usually eat turkey! -Jessica L
