For the lovely month of June Jenn has given us the theme of sensible snacking. I need to admit that I did a terrible job at sensible snacking for this week's post, I have no excuse I just had a bad day :S
Anyhoo... let us start with breakfast shall we... It may look a little sad but it is a perfect start to the day. This egg white scramble consists of 2 egg whites, 1 whole egg, half a zucchini, a few mushrooms, cherry tomatoes and crumbled feta! After inhaling this I jumped in the car and went to work.
Lunch consisted of leftovers from dinner the night before roast pork with roasted brussels sprouts, asparagus, apples and homemade gravy... swoooon! So good :)
~~~~~I forgot to save this pic to my USB so I will upload when I get home from work!~~~~
Now for snacks, I am so dodgy but all I packed for snackage today was chocolate covered peanuts and coffee. I don't generally get hungry in between meals when I am work (may be because I sit on my butt all day in front of a computer)
Dinner was amaze-balls. I came home from work last night to the delicious smell of slow cooking bolognese. After I finished my quick evening workout I cooked up some spaghetti, nuked some peas and topped the meal with some grated Parmesan. Yum.
I couldn't finish off the day without a slice of the orange meringue pie I made the day before (recipe to come soon). Of course a few teensy scoops of vanilla ice cream were required too....
How is every ones Wednesdays going? I can't wait for this work week to be over. Australia has Queens holiday next Monday so it is a long weekend for me!
My goodness, your photography is gorgeous! I have ALWAYS wanted to try meringue pie, especially since I adore lemon tarts/bars. And chocolate covered peanuts? Now we are talkin ;).
ReplyDeleteDefinately make it! So yum :) Plenty of recipes around the place for meringue pie (or check back later in the week for mine)
ReplyDeleteI am so hopeless with making crusts! I think next time I make this I will use premade shortcrust pastry :D
ReplyDeleteIm in love with your blog (and your eats) girlie! Loving the lemon meringue pie, nom!
ReplyDeleteYou can cook for me anytime! Ahaha, I just found your blog so excuse me for asking a dumb question: Are you from the UK? And if so, can you please explain to me why everyone over there seems to drink instant coffee? I just got back from studying there for a term and it was the strangest thing to me. In America, you almost never see instant.
ReplyDeleteIf you're not from the UK you can still cook for me anytime.
Great food and pictures!!!^^
