I feel so sorry for onions, they get such a bad rap... but they are such an essential staple ingredient! I can always depend on finding a few hiding in my kitchen.
The following recipe is a perfect dish for a night where you have an empty fridge and pantry. As long as you have some onions around and a few other pantry staples then you have simple and delicious meal to prepare!
Onion Tart
adapted from Stephanie Reynaunds 365 good reasons to sit down and eat
- 1 sheet of puff pastry
- 1 tablespoon of dried herbs (I used dried parsley and oregano)
- 6 onions, sliced
- 2 tablespoons of oil (I used macadamia oil)
- 1 tablespoon of honey
- 1/3 cup of pine nuts
- Preheat the oven to 180°C or 350°F
- Fold the dried herbs into the sheet of puff pastry, roll out and press into a greased tart dish
- Saute the onions with the oil in a large fry pan until they start to caramelize.
- Add the honey and pine nuts and brown.
- Bake the empty pastry base for 10 minutes, remove from the oven and top with onion mixture.
- Bake for another 5-10 minutes until the pastry looks crispy.
Serve with a green salad for a perfect lunch or a light dinner.
