Camping Trip to Bjelke-Petersen Dam and go have a look at my guest post :)

A little while ago, Josh and I jumped in the car and drove north to meet up with my parents for a weekend camping trip at Bjelke-Petersen Dam.

The boys had an awesome time drinking beers and fishing in the dam.
Mum and I took a more relaxed approach to the weekend, reading magazines and exploring the area.


We stayed right next to the dam so it was close for the boys to put the boat in and it was easy for mum and I to wander around taking lots of pictures of the area. Josh and I also drove up to the Bunya Mountains which is awesome! Lots of long bush walks and beautiful scenery.

Hope you enjoy the pictures and if you live in Queensland or are tripping around Australia it is definitely worth dropping into Bjelke Peterson Dam/Bunya Mountains area :)

Hungry Recipe - Onion Tart


I feel so sorry for onions, they get such a bad rap... but they are such an essential staple ingredient! I can always depend on finding a few hiding in my kitchen.

The following recipe is a perfect dish for a night where you have an empty fridge and pantry. As long as you have some onions around and a few other pantry staples then you have simple and delicious meal to prepare!

Onion Tart 
adapted from Stephanie Reynaunds 365 good reasons to sit down and eat
  • 1 sheet of puff pastry
  • 1 tablespoon of dried herbs (I used dried parsley and oregano)
  • 6 onions, sliced
  • 2 tablespoons of oil (I used macadamia oil)
  • 1 tablespoon of honey
  • 1/3 cup of pine nuts

  1. Preheat the oven to 180°C or 350°F
  2. Fold the dried herbs into the sheet of puff pastry, roll out and press into a greased tart dish
  3. Saute the onions with the oil in a large fry pan until they start to caramelize.
  4. Add the honey and pine nuts and brown.
  5. Bake the empty pastry base for 10 minutes, remove from the oven and top with onion mixture.
  6. Bake for another 5-10 minutes until the pastry looks crispy.

Serve with a green salad for a perfect lunch or a light dinner.

WIAW - Cleaning out my fridge/pantry

For the month of April, Jenn over at Peas and Crayons has set the challenge to add an extra cup of veggies to our meals. How did I go this week?

I am a little OCD when it comes to having an organised kitchen so this week I have been trying my best to think up delicious ways to use up the last remnants of food in my pantry or fridge. I had bunch of veggies that I bought last week so I have been using a lot up following the extra cup of veggies challenge.

Wedding Venue Sneak Peek

I know I haven't mentioned much of my wedding plans here. The reason being we have been super indecisive on the location, who to invite, the theme etc (I mean it took me two months to decide on an engagement ring!)

Grocery Haul - How to stock up on all the good stuff

I thought I would share a recent grocery trip to Aldi with you guys. If your not from Australia or haven't heard of Aldi before, it is like no other grocery store I know.

The main selling point of Aldi as I see it is affordability and simplicity. They stock a limited number of brands (mainly their own), they don't sell a bunch of crappy grocery items you don't need and they are pretty cheap.

I mainly go there when I want meat or need to stock up on some veges. They have a decent range of both and are a lot cheaper than other grocery stores like Woolworths or Coles.

When I go grocery shopping I try to buy only proteins and vegetables, because for me these are what make up the majority of my diet. I try to avoid most other processed foods.

If I am craving dessert or anything like that then I prefer to make it from scratch, other than that I really try to keep them out of my house.









It is also significantly cheaper to shop like this. It only cost me $150 for all of this! This will feed the boy and I for a week or more. If I was to shop at a more generic grocery store, the equivalent plus all the random stuff that ends up in my trolley can cost up to double the amount.

Lately I have been feeling a little slack with my healthy eating and exercise. Sometimes I just need a pick me up to help get me back on track. Pinterest is such a great place to find food and fitness tips, inspiration and motivation. It is a amazing what a few words can do...

What I Ate Wednesdays - served with an extra cup of veges and a good dash of lateness

I am a little tiny bit late for WIAW this week. I could serve you up some awesome excuses but couldn't see the point. Instead may I present my eats for this week's WIAW!

For the month of April, Jenn over at Peas and Crayons has set the challenge to add an extra cup of veggies to our meals. In case you didn't know... I kinda have a intense love for vegetables, so this challenge is a dream come true.



Now let me just say... that dinner was beyond epic. Chicken parcels are my go-to comfort food! It would be our special meal for birthdays and special occasions when I was growing up so they remind me of family, home and all things warm and fuzzy. Just what I needed this week when I have been feeling so bleh...
