Skinny Taste Review : Balsamic Chicken with Roasted Vegetables

I absolutely love Skinny Tastes recipes. She is a cooking genius.
Not only does her food taste absolutely delicious but she makes tiny changes to her favourite recipes to make them healthy.

I have been cooking her food for the past 4 months or so and 99% of everything I have cooked has been amazing!

Recently I cooked her 'Balsamic Chicken with Roasted Vegetables' - Oh my gosh, it was amazing! The balsamic sauce just brought the whole meal together. The chicken was moist and juicy. The vegetables were flavoursome and perfectly cooked.

I found the recipe simple to follow. Just chop up the huge amount of vegetables. Make the balsamic sauce. Add all the ingredients to a baking dish/s - I had to use 3 baking dishes it made so much. Cook and devour!

Here is my rendition of her yummy meal and I am pleased to say it turned out very similar to hers.

Our fruit trees!

Earlier this year we moved into our new home. I was happy to see that we had 7 developed fruit trees!

I got to taste the grapefruit, lemons and oranges as they were still bearing fruit when we moved in.

However the other trees were fruitless as it was close to winter.

I am so excited to see little baby fruit growing on the trees now that it is coming into Summer!

I am a bit clueless when it comes to working out what each tree is. I am thinking nectarine

They are so adorable, I can't wait until they ripen!

We have a big peach tree and it is absolutely covered in little baby peaches, they are just starting to change colour but are still rock hard. I am dying to pick these.

The boy had to climb the laddar to pick down about 8 huge avocados!

Our Crazy kitten Milly isn't allowed to roam a lot so when she is given a bit of freedom she goes mental. Although this photo is blurring I just had to include it because it is hilarous.

She loved pouncing around in the newly pruned branches.

Pizza Heaven

The boy and I travelled to our hometown over the weekend and had an awesome time.

Sadly it had to come to an end but we did finish our weekend we had the most amazing homemade pizzas at my parents house made specially in their wood fire pizza oven. Yummo!


Our pizzas were made with inspiration from a great recipe book called Pizza Modo Mio.


We made two types of pizza. The first was a hybrid ham and margarita pizza and second pan fried prawns. Both had bocconcini, mozzerella, basil and home grown tomatoes.


We even had dessert pizzas, it just uses a basic pizza base but with added sugar. Spread a meringue and almond meal mixture as the 'sauce', then top with poached pear (I poached them in red wine and spices) and white chocolate. We cooked them in the pizza oven until they had browned slightly, took them out and sprinkled slivered almonds on top and popped back in for a minute or tow. They were absolutely amazing!

Wedding Planning: Destination or Home?

Planning a wedding is hard. And stressful. Especially when the two main people in the wedding have opposite ideas about what they want.

We are trying to come to a compromise. Every wedding venue we have visited is either ridiculously expensive or booked out until the end of time.

At the moment we are tossing between a destination wedding or having a more traditional wedding in our current hometown, Toowoomba.

In my internet trawling I found some promising information on the Cradle Mountain Lodge website.

Christmas Shopping at Forever New

I found this awesome shop in my last shopping trip to Brisbane called Forever New. When I was in there I fell in love with their clothes and accessories but didn't have time to buy anything.

Welcome!


Why am I starting a blog? I guess mainly as an outlet to express the things I enjoy.

I look forward to sharing my food adventures, obsession with shopping and all the fun things that life sends my way!

I also hope that recording and sharing this with like minded people will give me the inspiration to push further with living an active and healthy lifestyle.

A little about me...My name is Emily. I live in Queensland - Australia with my wonderful fiancĂ©, Josh. I finished my university degree last year and I am working in a normal 9-5 job (with shopping money to spare!). I love working on our house, spending too much time in my kitchen and playing with our adorable kitty Milly.
